Summer salad

‘Fruit in a salad?!’ That is often how people first react when I tell them for example about the below recipe. They hopelessly fail in their attempts to keep a neutral face in front of me which usually results in some funny situations. The idea of having something ‘sweet’ in what is supposed to be a ‘vegetable’ salad seems to be a tad too exotic to some of them. Such a shame though, especially in August, when there are so many different fruits to choose from! I got a few recipes from Fred (a lot of them combining fruit with veg in a salad) and I intend to share them here to hopefully change a few opinions…

For 2 big eaters you need:

3 tomatoes
3 prunes (or nectarines)
lamb’s lettuce (or baby spinach)
1 can of tuna in water
some feta cheese (optional)
a handful of pine nuts

For the salad dressing:

3 tbsp of olive oil
2 tbsp of balsamic vinegar
a little bit of honey (if you like)
salt & pepper

Tip: if you want to have a part of your salad the next day for lunch, keep the salad dressing separate.
