Peppers… Not the first thing that comes to mind when you think of Italian food, right? And yet that’s where I got this recipe from. As usual, it’s super easy to make (the oven does all the work for you) and super tasty. Besides that, peppers are in season at the moment, so you can feel even better about yourself!
For 2 big pepper eaters you need:
5 mixed peppers
3 cloves of garlic (more if you want of course)
honey (not necessary, I just love honey)
salt & pepper
Cut the peppers up in big parts, like you see on the picture. Pour a bit of olive oil over them, followed by some salt & pepper. Chop up the garlic and the fresh parsley and mix them with the breadcrumbs, add a tad of salt. Sprinkle the breadcrumb mixture over the peppers, then drip some olive oil on top. Finish off your creations with the honey and then put them in the oven for about half an hour at 180 degrees. Enjoy!
