Quinoa salad

The first time I had quinoa was long before the hype around this ‘superfood’ started. Once again it was my personal food guru Fred who was aware of it’s existence before everyone else. Strangely enough, it wasn’t really until last year that I started using quinoa myself. One of the great things about it is that you can combine it with pretty much everything you like. I find it the perfect healthy food to make when you’re tired after a long day’s work; it’s super easy and quick. The below recipe is one of my favourites at the moment, but as I said, plenty of different combinations are possible so let your creativity go wild!

For 2 big eaters you need:

90 grams of quinoa
a (chicken) stock cube
2 ripe avocados
a little less then half a package of feta cheese
10 cherry tomatoes
half a cucumber
some spring onion
a bit of lemon
2 tbl spoons of olive oil
2 tbl spoons of sesame seed oil
salt & pepper

Boil the quinoa with a (chicken) stock cube in about 200 ml of water, as soon as it’s done let it cool down a bit. Cut up the vegetables and the feta and add everything to the quinoa. Pour the olive and sesame oil over the salad, then add some salt and pepper. Squeeze about half a lemon over it and you’re ready to eat!
