Lisette and I have been friends for more than 20 years (yep, I’m officially old). We met in school when we were innocent little 9 year olds, went on numerous holidays together and even when I moved to Paris we stayed in touch. Every time I go back to Holland we meet up and we generally spend an entire evening chatting about our ‘terrible’ boyfriends, life and… food! All of this of course accompanied by a nice bottle of wine (or two). Over the past few years, Lisette and I have somehow developed a kind of passion for simple, healthy-ish food and often we end up testing and tasting our latest culinary discoveries together. So, when Lisette came to spend the weekend with me in London, I really wanted to make the delicious veggie pizza that she had made for me the last time I was around hers.
For 3 big eaters you need:
1 pizza base (or 2 smaller ones)
1 jar of tomato sauce for pizza (or homemade of course)
1 small bunch of broccoli
1 red pepper
around 10 mushrooms
cheese (mozzarella, parmesan, cheddar, you name it!)
Pour the tomato sauce on the pizza base. Cut the vegetables up and stir-fry them lightly, then scoop the veggies on the pizza base. Sprinkle a bit of cheese on top, add some salt and pepper and put the pizza in the oven (180 degrees). Make sure you keep an eye on your pizza while it is in the oven so it doesn’t burn.
